Title: Stovetop Garlic Confit Spread
Yield: 2 servings
Peel the garlic, then nip off the very end of the root part. Leave otherwise whole.
Heat a nonstick pan to low heat, then add a little bit of olive oil. Roast, turning and tossing occasionally, until brown and soft.
Transfer to a ramekin and let cool slightly, then mash. Add salt a pinch at a time, and blend in a little oil.
Fantastic spread for bread.
